Title: Veggie Snacks

Today we're going to use "Fresh From Florida" vegetables to make readily available snacks.  Kids of all ages are more likely to snack on healthy foods if they're washed and precut and in the refrigerator ready for use.  Try to keep these items on hand and help your family make wise snack decisions.

After you've cut your vegetables and you're ready to put them in the refrigerator, remember there are several things on the market to keep them good and fresh in the refrigerator.  Your regular zip bag can be used.  Or the many, one of many containers on the market that are plastic with air tight lids.  If you keep these snacks in you refrigerator at around 38 to 45 degrees, they should last for about a week.

After your vegetables have been rinsed, they can be prepared for you snacks.

First let's cut our peppers.  To cut a pepper, take your knife and slice from the stem down, all the way to the cutting board.  All the way around until you have removed at least 4 sections of the pepper.  At that point you want to clean out the seeds and some of the white part that's in the middle.  And next the peppers can be sliced and they're ready to go in the containers.

Next we'll do our celery.  You'll want to trim the brown ends off of both ends of the celery.  And if they're really wide veins of celery you want to go ahead and cut the stalk in half.  Now when you get them all trimmed, you want to make sure that your snacks are going to fit in your container.  You want to cut it to the desired length to fit in the container.

Now we'll cut our carrots.  After we've trimmed both ends of the carrots, and peeled them with a carrot peeler, we're going to, once again, cut them long ways in half.  And then we're going to cut them in half or thirds.  Whatever size we need to fit our container.

Another popular item for snacks is green beans.  They can be cooked and cut into portion size and also left in the refrigerator for snacks.

Now that our vegetables are prepared, we can store them in the refrigerator.  Stored vegetables can be eaten raw or used in other ingredients.  Add a low fat yogurt dip or some low fat salad dressing and you have an easy, delicious, nutritious snack that young children can get for themselves.
