Title: Egg Muffins

Length: 2:02

Today we're going to cook a simple, nutritious breakfast or snack recipe using "Fresh From Florida" products.

Our recipe today is called "egg muffins" and it's very simple and I'm going to do it for you right now.

We're going to start out with 4 eggs, we'll put them in our mixing bowl, and we want to lightly beat the eggs.  We don't want to beat them too far.  Make sure all of them are busted.  Mix them up.

Next we're going to put about ½ cup of chopped celery, a ¼ cup of milk.  We want to make sure this is mixed together really well.

We're going to put it into our muffin pan and put it into the oven.  We need to spray our muffin pan so that our muffins will come out, and this recipe should make about 6 muffins in a regular sized muffin tin.

Remember when putting the muffin mix in the muffin tin you only want to fill each one about ¾ of the way full, so the muffin mixture has room to rise in the oven.

This is also one of those recipes that can be made the night before and put in the refrigerator and warmed up the next morning for breakfast.

Then the whole mixture goes into the oven at 350 degrees for about 20 minutes.

And in 20 minutes, they'll look like this.  Doesn't that look good?

Now that our muffins are ready, we'll take them out, we'll go around the sides with a knife.  Make sure they're cut loose so they don't tear.  They'll look pretty.

We cut them out of our muffin pan and will put them on our plate.  With some of our other "Fresh From Florida" items.

And there we have it.  Out of a few "Fresh From Florida" items we made a nutritious and healthy breakfast that didn't take a long time.

Look for new recipes each month from the "Fresh From Florida Kid's" program.
