Today we're going to look at some different ways to use "Fresh From Florida" corn. Corn, whether it's boiled or roasted can be cut from the cob and used in many different ways. Put in salads or mixed with other foods for side dishes.
We're going to cut some corn from the cob now. I've picked out a roasted one here, we're going to use that. And to cut it from the cob I like to use a small knife for better control and make sure it's very sharp. Try to put a flat side down and I like to do it in a bowl, dish or pan so that the corn doesn't scatter everywhere.
Let's see if we can get our corn off. We'll gently scrape down each side. We don't want to scrape too close to the cob. Once you do this a couple of times you'll be able to feel it and see about how far to cut. We want to get all the corn, but not to much of the pithy, woody part of the cob. OK, see, very simple. Comes right off. Let's cut one more. Make sure you always have the flat side down, so the corn cob doesn't try to slip away from you while you're looking. You may cut a finger.
OK, we've got the corn cut off the cob. We choose our roasted corn for our dish today. We roasted it by putting a little bit of olive oil on it and putting it in the oven for about 30 minutes. I usually turn it one time while it's in there too. And the roasting will bring out some of the sugars and juices and brown it a little bit and give it a lot more flavor.
Once we have it off the cob, we can do so many things with it. This can go into a salad. This can go into a bowl of already prepared "Fresh From Florida" vegetables. Just like this. And a quick little stir and we've some left over "Fresh From Florida" corn and made a great dish out of it. How about a little bit of parsley on top of it too. Just make it look pretty. A wonderful "Fresh From Florida" side dish with our cooked corn.
Our uncooked corn can also be done the same way. Taken off the cob and cooked by itself or added to other dishes. One of the advantages of cooking it by itself in the pan is, once again, like roasting, it will brown and bring out a lot of sweetness. Really good flavor.
The uncooked corn can be cut from the cob the same way as the cooked corn. Just gently slide down each side with your very sharp knife, making sure not to come to close to the cob. And the kernels will come right off.
Once you get them all off you can put them in a skillet and cook them very gently with some olive oil and a little bit of seasoning, or by themselves to add to something else. We've got one cooking over here. Let's check it and see how it is.
Here's our corn that was cut, uncooked from the cob. We roasted it about 5 minutes in a skillet, about medium heat. Look at that, it's turned nice and brown. What should we do to that? Let's put it in a bowl, add some leftover steak from last night, maybe a little bit of parmesan cheese. Give that a little mix right quick. There we go!
