Chopped Salad
- Ingredients
- 4 cups Florida lettuce hearts, chopped
- 1 15-ounce can red beans, drained
- 1 cup Florida celery, chopped
- 1 cup Florida red bell pepper, chopped
- 1 cup Florida yellow squash, chopped
- 3/4 cup Florida peanuts or pecans, chopped
- 1/2 cup cooked corn kernels
- 1/2 cup Florida cilantro, chopped
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons grated Parmesan cheese
- Preparation

- Combine first 8 ingredients in a large bowl; mix well.
- Whisk together vinegar and oil and pour over salad; mix well. Top with cheese and serve.
